The wine cellar

A grandiose cliff with a cellar built in it, a walnut tree right by the entrance. We call it a poker tree. We sit under the tree, the wind swishes and whirls the cards, the air is getting drier and drier so it’s a good reason to drink a little, then it gets even drier, so we drink more and so on until we don’t care about the wind anymore.

All cellars are just a cellar. It’s not good or bad. Stone is just a stone, and tuff and bricks. What make a cellar good is how the wine feels in it. It is only as good as how well it feels. Just like in the case of sex. It is just as good as the effort you put in it.

There’s no such thing in the Bolyki Cellar, but it contains all the goodness which needs to make the wine as cosy as it can get.

Seriously though…

When Jani started his career as a winemaker he was looking for a cellar and this is how he found the cellar in the quarry. Wines made in 2003 were all made here and brought home the bacon. Producing more grapes resulted in buying more cellars. By now the estate has grown into 4.2 hectares which includes 4 strip pits, and its surroundings which were purchased from 50 different owners.

Tuff cellars are popular because it’s cheap to form and they keep the warmth well, although Johnny has always wanted to provide an up-to date and sterile environment for winemaking so the building work began in 2019… in 2020 the completed new building suited well in style to the environment, inside we work with the most modern technologies, while solar panels provide all electrical needs to be eco-friendly. Wines are bottled locally, besides that stock and storage issues were settled too. We have found solutions to all our problems.
